Volatile degradation products ofl-dehydroascorbic acid
Zeitschrift für Lebensmittel-Untersuchung und -Forschung, 1976Volatile degradation products were isolated from a solution of L-dehydroascorbic acid in phosphate buffer solution of pH 2,4,6 and 8 heated under reflux for 3 h or left at 25 degrees C for 200 h. The products were identified by comparison of their gas chromatographic retention data, infra-red and mass spectra with those of authentic compounds.

Interaction of mammalian hemoglobins with dehydroascorbic acid
Experientia, 1981Reactive sulfhydryl groups of major hemoglobins from guinea-pig, rat and cat reduced dehydroascorbic acid to ascorbic acid leading to formation of intrachain disulfide bonds. Hybridization experiments indicated that the reduction was carried out by the alpha chain of cat hemoglobin.

Reduction of dehydroascorbic acid at low pH
Journal of Biochemical and Biophysical Methods, 2007Ascorbic acid and dehydroascorbic acid are unstable in aqueous solution in the presence of copper and iron ions, causing problems in the routine analysis of vitamin C. Their stability can be improved by lowering the pH below 2, preferably with metaphosphoric acid.
