Fermentative Formation of Diacetyl
Nature, 1946ACCORDING to Martius recent hypothesis1, dehydrogenation would always constitute the primary phase of pyruvic acid breakdown in the animal organism. Dehydrogenation is followed by decarboxylation, with the formation of the ketene-like radical which may act as hydrogen acceptor, being reduced to acetaldehyde.

Toxicological Reviews, 2006
Diacetyl is a diketone flavouring agent that is commonly employed for buttery taste as well as other purposes. Industrial exposure to flavouring agents, particularly diacetyl, has recently been associated with bronchiolitis obliterans, a severe respiratory illness producing fibrosis and obstruction of the small airways.

Hydrolysis Kinetics of Diacetyl Nadolol
Journal of Pharmaceutical Sciences, 1987Diacetyl nadolol, a prodrug of nadolol and a beta-blocker, has corneal permeability approximately 20 times higher than that of its parent compound due to its higher lipophilicity. Hydrolysis studies were conducted for diacetyl nadolol at various elevated temperatures and pH values to provide stability information for its ophthalmic preparations.

Removal of diacetyl from beer by adsorbants and diacetyl reductase
Biotechnology and Bioengineering, 1979AbstractRemoval of diacetyl from beer with adsorbants like cellulose, silica gel, activated charcoal, calcium phosphate gel, anion‐ and cation‐exchange resins, and silicylic acid black soil bed (SABSB) was attempted in comparison with the enzyme diacetyl reductase (EC 1.1.1.5).

A study of the reaction of urea with diacetyl monoxime and diacetyl
Clinical Biochemistry, 1972Summary 1. Four compounds were synthesized under different conditions using either diacetyl or its monoxime as a reagent in reactions with urea. From the absorption spectra and the log10 A vs. wavelength curves, the four compounds were shown to be the same substance as confirmed by the similarity in their infrared spectra. The compounds obey Beer'
