Transformation associated with catecholase in Dioscorea alata during storage
Phytochemistry, 1980Abstract The Michaelis constant of catecholase in 3 cultivars of Dioscorea alata was determined. Oxidative browning was related to the activity of the enzyme in the yams. Inhibition by cysteine was competitive, while 2-mercaptoethanol caused an uncompetitive type of inhibition.

Pharmacy and Drug DevelopmentThis research takes a closer look at the chemical makeup of Dioscorea alata (water yam) leaves, using a technique called Gas Chromatography-Mass Spectrometry (GC-MS). While water yam is mostly known and cultivated for its edible tubers, its leaves are often overlooked, even though they hold important medicinal and nutritional value.

Unusually stable monoacylated anthocyanin from purple yam dioscorea alata
Tetrahedron Letters, 1991Abstract Alatanin C isolated from the tuber of purple yam Dioscorea alata . is the first discovered unusually stable monoacyalated anthocyanin in nuetral aqueous solutions. The stability is ascribed to the intramolecular stacking of sinapic acid and to the chiral self-association of anthocyanidin nuclei.
