Abstract The purposes of this study were to investigate the antioxidative activity and the stability of dioscorin of various yam cultivars (Mingchien (MC), Tainung No. 2 (TN2) and Keelung (KL)) under the influences of varying pH. Total phenolic contents from all yam varieties were the highest at pH 5, but gradually decreased with elevated pH.

Applied Science and Engineering Progress, 2023Dioscorea alata is a species of yam found in many countries in Southeast Asia. It contains many bioactive compounds consisting of steroidal saponins, phenolic compounds flavonoids, polysaccharides, and proteins. Eighty to eighty-five of the soluble proteins in the tuber of D. alata are dioscorin.

International Journal of Food Science and Technology, 2012SummaryThe total antioxidant activity (TAA) and trypsin inhibition activity (TIA) of storage protein dioscorin from six yam cultivars (Dashan, Hualien No. 3, Keelung, Mingchien, Tainong No. 2, and Japanese yam) were demonstrated. Japanese yam had the highest TAA and the lowest calculated EC50 at any purification stage.

Journal of Agricultural and Food Chemistry, 2013To study the biomedical functions of dioscorins isolated from various species of Dioscorea , we investigated their antiallergic potential using an OVA-induced allergy mouse model. All the dioscorins suppressed allergic reactions by decreasing the serum IgE and histamine levels.
