Microbial Oxidative Stress in Food Fermentations: A Comprehensive Review

open access: yeseFood, Volume 7, Issue 4, August 2026.
Oxidative stress has a dual role in food fermentations: low ROS supports adaptive signaling, whereas excessive ROS causes cellular damage and process inhibition. Managing redox state as a controllable process variable can improve fermentation robustness and final food quality.

Analysis of a Multilevel Dual Active Bridge (ML-DAB) DC-DC Converter Using Symmetric Modulation [PDF]

open access: yesElectronics (Switzerland), 2015
Dual active bridge (DAB) converters have been popular in high voltage, low and medium power DC-DC applications, as well as an intermediate high frequency link in solid state transformers. In this paper, a multilevel DAB (ML-DAB) has been proposed in which two active bridges produce two-level (2L)-5L, 5L-2L and 3L-5L voltage waveforms across the high ...

General modulation optimization methods of dual-active-bridge (DAB) converters

IECON 2017 - 43rd Annual Conference of the IEEE Industrial Electronics Society, 2017
Dual-active-bridge (DAB) DC-DC isolated converter is widely used in many applications e.g. power supplies, transportations and renewable power systems. In this paper, general modulation characterization and optimization of DAB converters have been analyzed and advanced modulation methods are proposed.
