This chapter deals with variations in egg size and egg quality. Egg size is a highly variable life-history trait, with up to twofold differences in egg mass among individual females within a population. Larger eggs contain absolutely more major egg components (shell, albumen, yolk) and absolutely more of several minor egg components (maternally derived

The Keeping Quality of Pasteurized Egg
Journal of Applied Bacteriology, 1969Summary Commercially produced pasteurized egg was stored in refrigerators at 36, 38 and 40°F and examined daily both organoleptically and bacteriologically. The counts at 20 and at 37°, as well as the coliform count, remained practically constant for a period, depending on the storage temperature, following which there was a sharp ...

Relation between egg shape index and egg quality characteristics
European Poultry Science, 2016The objective of this study was to investigate the impact of the egg shape index on egg quality characteristics. The eggs used in this study were laid by layers of the ATAK-S strain. The eggs were classified with respect to shape index (SI), namely sharp eggs (SI < 72), normal (standard) eggs (SI = 72-76) and round eggs (SI > 76).
