Changing the Oral Tribology of Emulsions Through Crystallization of the Dispersed Triglyceride Phase

The solidity of the dispersed phase of suspoemulsions was varied by changing the temperature and using different triglycerides to investigate the oral tribology. If the dispersed phase is solid, this is shown in the Stribeck curve by an increase in friction, whereas with a liquid dispersed phase the friction decreases.
