Electronic Tongue for Tea Tasting

A hand-held device was developed for quantifying astringency and umami in tea infusions, based on (1) quenching the fluorescence of 3-aminophthalate by the astringent tannins and (2) the fluorogenic reactions of o -phthalaldehyde with the amino acids, the major umami ingredients. Both reactions were measured with a portable fluorescence sensing system
