Natural processed cheeses showed a more favorable nutritional profile, including higher unsaturated fatty acids and better functional performance. A balanced fatty acid composition was identified as a key factor influencing meltability, oil separation, and overall quality of processed cheeses.

In ankylosing spondylitis‐acute anterior uveitis (AS‐AAU), trained immunity monocytes (Mono‐TI) differentiate into macrophages in the eye, retaining trained immunity features. Mono‐TI cells secrete pro‐inflammatory cytokines and chemokines, including IL‐1β, TNF‐α, and CCL3.

Bacteroides fragilis is associated with type 2 diabetes (T2D) arterial calcification and can be activated by macrophage‐derived extracellular vesicles (EVs). BF takes up EVs via receptor‐mediated endocytosis, and activation is induced by EV‐derived Mef2d, thereby inhibiting ArsR family transcriptional regulator transcription.

Ovalbumin-stabilized concentrated emulsion gels
Bulletin of Materials Science, 2020In this paper, ovalbumin is used as the sole emulsifier to produce stable concentrated oil (oil phase = 70 wt%) in water emulsion near ovalbumin isoelectric point. The emulsions display excellent stability against flocculation and coalescence at ovalbumin concentration ranging from 0.6 to 1 wt%.
