Enzymatic glycerolysis of soybean oil [PDF]

open access: yesJAOCS, Journal of the American Oil Chemists' Society, 1998
AbstractEnzymatic glycerolysis of soybean oil was studied. Of the nine lipases that were tested in the initial screening, Pseudomonas sp. resulted in the highest yield of monoglycerides. Lipase from Pseudomonas sp. was further studied for the influence of temperature, thermal stability, enzyme/oil ratio, and glycerol/oil ratio.

Evaluation of the use of surfactants as additives in enzymatic glycerolysis reactions

open access: yesEuropean Journal of Lipid Science and Technology, 2012
AbstractMAGs and DAGs are widely used as emulsifiers in many industries. During glycerolysis reactions for their production, the immiscibility of the glycerol and the oil phases is an important drawback for practical purposes. For overcoming this problem, the use of a food grade surfactant can be an important alternative to improve system homogeneity ...

Enzymatic preparation of diacylglycerols: lipase screening, immobilization, characterization and glycerolysis performance

open access: yesJournal of the Science of Food and Agriculture
AbstractBackgroundsGlycerolysis, with its advantages of readily available raw materials, simple operation, and mild reaction conditions, is a primary method for producing diacylglycerol (DAG). However, enzymatic glycerolysis faces challenges such as high enzyme costs, low reuse efficiency, and poor stability.
