Effect of debranching enzyme hydrolysis and microwave treatments on the resistant starch enrichment of breadfruit

open access: yes
Breadfruit's substantial carbohydrate content makes it a viable starch source, specifically resistant starch (RS) that helps prevent chronic diseases. This study investigated the effects of enzyme hydrolysis and microwave treatment (MT) on enriching type

Stable Protein‐Based G‐Quadruplex‐Derived Supramolecular Bioinks as Tunable ECM‐Mimetic Constructs Assembled by Combining Non‐Covalent and Covalent Strategies

open access: yesAdvanced Materials, EarlyView.
Harnessing the synergistic interplay of supramolecular self‐assembly, under macromolecular crowding conditions, and enzymatic‐mediated covalent crosslinking toward a stable protein‐based G‐quadruplex‐derived supramolecular bioink. This bioinspired strategy enables the biofabrication of complex and tunable ECM‐mimetic constructs, providing a platform ...

Lactose hydrolysis by free and fibre-entrapped β-galactosidase from Streptococcus thermophilus

open access: yesAgricultural and Food Science, 1993
To study lactose hydrolysis by β-galactosidase, this enzyme was produced from Streptococcus thermophilus strain 11F and partially purified by acetone and ammonium sulphate fractionation, and ion exchange chromatography on a Q Sepharose FF column. Lactose

Conditions optimisation for solid-state enzymatic hydrolysis of cottonseed protein by compound enzyme

open access: yesSiliao yanjiu
The experiment aims to optimize the conditions for solid-state enzymatic hydrolysis of cottonseed protein (CSP) using compound enzymes to improve its acid-soluble protein content and reduce sugar content, while reducing free gossypol (FG) levels.

Critical Melting–Freezing Pretreatment Enhances Enzymatic Hydrolysis for Porous Starch Preparation: Role of Partial Structural Weakening and Surface Modification

open access: yesFoods
In this study, critical melting followed by freeze–thaw (CMFT) pretreatment was employed as an effective strategy to partially weaken and modify the surface structure of starch, enhancing enzymatic hydrolysis (EH) for porous starch preparation.

Dexime: A Selectively Enzyme‐Degradable Hydrogel for Protein Therapeutic Release

open access: yesAdvanced Materials, EarlyView.
A dextrin‐oxime hydrogel (dexime) is produced using ketone or aldehyde modified dextrin and tetra‐oxyamine modified poly(ethylene glycol). The rheological and mechanical properties of dexime are tunable. Dexime is injectable, cytocompatible, hydrolytically stable, and selectively degradable by α‐amylase.

Bubble Formation Control: Fabrication of Centimeter‐Sized Tissue‐Like Constructs by Catalase‐Coated Oxygen‐Releasing Hydrogel

open access: yesAdvanced Materials, EarlyView.
Oxygen‐releasing hydrogels are widely used to support cell survival in 3D cultures and to promote wound healing. However, incorporating catalase to convert H2O2 into O2 often generates additional oxygen bubbles, leading to material instability which rarely addressed.
