The influence of microwave irradiation on the chitosan hydrolysis catalyzed by cellulase enzyme was studied. The hydrolyzed chitosan was characterized by measuring its viscosity and reducing sugar.

Hydrolysis of Milk Proteins by Microbial Enzymes
Raw skim milk was incubated at 7 C for 15 days after inoculation with six psychrotrophic bacterial cultures previously isolated from raw milk. Effects of the microbial activities on proteins of milk were evaluated by polyacrylamide gel electrophoresis. Results showed that all psychrotrophs hydrolyzed milk proteins.

A Bifunctional T3SS‐Effector Simultaneously Cleaves Host MAP Kinase and Inhibits PPM1A Phosphatase
Pathogenic bacteria exploit the metalloprotease effector NleD to subvert host defenses. Structural, biochemical, and infection analyses reveal a bifunctional mechanism by which NleD binds and inhibits the host phosphatase PPM1A while preserving its proteolytic activity against MAPKs.
