USE OF ENZYMES AND ENZYME PREPARATIONS IN FOOD TECHNOLOGIES

Chemistry, Technology and Application of Substances, 2022
The analysis of literature sources on the use of enzymes, enzyme preparations and immobilized enzymes, allowed to determine which enzymes are used in certain sectors of the food industry. It is established that the condition for the use of enzymes in the food industry is the availability, low cost and inertia relative to the target product. Examples of

The enzymic preparation of 14C-kaurene

Planta, 1969
Endosperm from immature seeds of Cucurbita pepo L. converts 2-(14)C-DL-mevalonate to (14)C-(-)-kaurene with a yield of nearly 40% of the active isomer. Kaurene is the main product and the only diterpene hydrocarbon which is formed from mevalonate in the system and is therefore easily obtained radiochemically pure.

Preparation and Application of Enzyme‐Nucleotide Conjugates

Current Protocols in Chemical Biology, 2018
AbstractIn this unit the preparation and application of enzyme‐nucleotide conjugates is depicted. First, a modified nucleoside triphosphate is synthesized bearing a long and flexible linker equipped with a thiol group. The nucleotide is then reacted with maleimide‐activated horseradish peroxidase to yield an enzyme‐nucleotide conjugate, which due to ...

Studies on the Cytotoxic Effect of Enzyme Preparations

European Surgical Research, 2008
The cytotoxic effect of two enzyme preparations for wound treatment has been studied. Testing was performed partly in vitro (tissue culture), and partly in vivo (wound strength). Regarding Varidase®, it was established in vitro that the effect depended upon dosage and exposure time, and that proper dose and time increased growth rate in treated ...

Enzymic Methods in Preparative Carbohydrate Chemistry

1991
Publisher Summary This chapter discusses the use of enzymic methods in preparative carbohydrate chemistry. Natural sugars are very active metabolites in cells, and so it can be expected that enzymes are useful at some steps in their in vitro processing. However, enzymes are rare, costly, or need to be isolated by unfamiliar techniques.

Preparation, Characterization, and Application of Enzyme Nanoparticles

2018
Enzymes are fundamental biocatalysts, which regulate various metabolic reactions. They exhibit high substrate specificity, sensitivity, and exceptional catalytic activity under ideal conditions and, hence, have been used as industrial catalysts. Enzyme nanoparticles have attracted the scientific community as they can be used for environment protection,

Preparation of enzyme multilayers on colloids for biocatalysis

Macromolecular Rapid Communications, 2000
The construction of enzyme multilayer films on colloidal particles for biocatalysis is described. The enzyme multilayers were assembled on submicrometer-sized polystyrene spheres via the alternate adsorption of poly(ethyleneimine) and glucose oxidase using a layer-by-layer approach. Microelectrophoresis and single particle light scattering measurements

Enteric spherules diastase in enzyme preparations

Journal of Microencapsulation, 1991
Enteric diastase spherules were prepared using cellulose acetate phthalate and eudragit RS-100 by emulsion solvent removal method. Factors that could affect the size shape and diastatic activity were studied. The studied factors include pH of aqueous media, temperature of dispersion media and concentration of surface active agent.

Preparation and Characterization of Single-Enzyme Nanogels

2011
Enzymes have been incorporated in nanostructures in order to provide robust catalysts for valuable reactions, particularly those performed under harsh and denaturing conditions. This chapter describes the encapsulation of enzymes in polyacrylamide nanogels by a two-step in situ polymerization process for preparing robust biocatalysts. The first step in
