Secondary Metabolites and Biological Activities From Achillea gypsicola Hub‐Mor. Under Foliar Applications of Chitosan and Salicylic Acid

open access: yesFood Science &Nutrition, Volume 13, Issue 5, May 2025.
Foliar practice of elicitors enhanced yarrow bioactive compounds (BCs). Full flowering stage is effective in the synthesis of BCs. Camphor and 1,8‐cineole were increased by 2.13 and 1.25 fold, respectively. ABSTRACT Elicitors play a crucial role in plant defense systems, often leading to an enhancement in secondary compounds across various species. The

EccDNA Analysis Provides Novel Insights Into the Molecular Mechanism of Firmness of Fish Fillet

open access: yesFood Science &Nutrition, Volume 13, Issue 5, May 2025.
We provide a new and basic eccDNA database for the molecular regulation of muscle firmness in grass carp. The eccDNA abundance in crisp grass carp was significantly higher than that in ordinary grass carp. EccDNAs likely play important roles in the muscle‐hardening of crisp grass carp.

Bio‐Based Epoxy Resins Derived from Eugenol with High Glass Transition Temperatures as Substitutes for DGEBA

open access: yesMacromolecular Materials and Engineering, Volume 310, Issue 5, May 2025.
Four eugenol‐based epoxy monomers with two or three epoxy groups are synthesized to produce epoxy resins with high bio‐content and high glass transition temperatures (Tgs). The obtained monomers are crosslinked with two common amine‐based curing agents and compared with samples made from diglycidyl ether of bisphenol A (DGEBA). High Tgs of up to 271 °C

A Facile Synthesis of 3‐Substituted Coumarins and Investigation of Their 3CLpro Inhibition Activity Against SARS‐CoV‐2

open access: yesChemistryOpen, Volume 14, Issue 5, May 2025.
A user‐friendly protocol for the synthesis 3‐substituted coumarin derivatives was developed using Friedel‐Crafts alkylation and ozonolysis as key steps. Deactivation of 3‐chymotrypsin like protease (3CLpro) enzyme using these coumarin derivatives were investigated to explored their potential as 3CLpro inhibitors for Covid‐19 Therapeutics.

Comprehensive review of sweetpotato flavor compounds: Opportunities for developing consumer‐preferred varieties

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 24, Issue 3, May 2025.
Abstract Flavor contributes significantly to consumer preferences of cooked sweetpotato. Sugars largely drive the sweet taste, while the volatile organic compounds (VOCs), mainly classified as alcohols, aldehydes, ketones, and terpenes, provide characteristic aromas and influence the overall perception of flavor.

Emerging Trends and Application of Edible Coating as a Sustainable Solution for Postharvest Management in Stone Fruits: A Comprehensive Review

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 24, Issue 3, May 2025.
ABSTRACT Stone fruits, also known as drupes, include apricots, peaches, plums, cherries, and nectarines that have high global demand due to their nutritional benefits and palatable characteristics. Being soft fruits, they are susceptible to various postharvest issues, reducing their shelf life, with postharvest loss reaching 15%–50%.
