Sensitivity Threshold for Selected Aromas and Defects in Casual Wine Consumers

open access: yesJournal of Sensory Studies, Volume 41, Issue 2, April 2026.
ABSTRACT Wine aromas and faults are caused by chemical compounds impacting wine quality that can originate from viticulture, vinification, bottling, or aging. Wine professionals are highly trained to recognize and assess quality indicators including characteristic aromas and faults/defects.

Importance of interaction between the matrix effect and microbial metabolism in the bioavailability of lignans

open access: yesJournal of the Science of Food and Agriculture, Volume 106, Issue 4, Page 2180-2189, 15 March 2026.
Abstract BACKGROUND Plant‐lignans are polyphenols with low bioavailability and bioactivity that are transformed by the intestinal microbiota into enterolignans. Our hypotheses are: (i) the way in which plant‐lignans are ingested in the diet affects, in a decisive way, the microbial metabolism of these compounds and (ii) an increase in lignan ...

Regional and Sex‐Dependent Immune Profiling Across the Colon in A Mouse Model of Ulcerative Colitis

open access: yesThe FASEB Journal, Volume 40, Issue 5, 15 March 2026.
At baseline, males have higher IL‐10, TH17 cytokines, and higher macrophages, neutrophils, and CD8+ cells in the medial and distal colon. Whereas females displayed increasing macrophages, lower TNF‐α, and higher IL‐1β, IL‐17A, and dendritic cells in the cecum and proximal colon.

From Grave to Cradle: Kombucha Waste for Sustainable Electronics

open access: yesAdvanced Science, Volume 13, Issue 15, 13 March 2026.
This study introduces a sustainable method to purify kombucha bacterial cellulose (KBC) with sodium bicarbonate and hydrogen peroxide, avoiding harsh chemicals. KBC films are patterned with gold and function as pressure sensors for flatfoot gait detection. At the end‐of‐life, the KBC‐based device biodegrades in soil, leaving environmentally benign gold
