Reactivity and stability of selected flavor compounds

open access: yesJournal of Food and Drug Analysis, 2015
Flavor is the most important aspect of food. Based on the complex matrix of the food system and the flavor structure themselves, one important factor that plays a key role in the quality attribute of food is flavor stability. Not surprisingly, there is a large volume of published research investigating the stability of different food flavor compounds ...

Coagulative Granular Hydrogels with an Enzyme Catalyzed Fibrin Network for Endogenous Tissue Regeneration

open access: yesAdvanced Healthcare Materials, EarlyView.
Coagulative granular hydrogels are composed of packed thrombin‐functionalized microgels that catalyze the conversion of fibrinogen into a secondary fibrin network, filling the interstitial voids. This bio‐inspired approach stabilizes the biomaterial to match the robustness of bulk hydrogels without compromising injectability, mimicking the initial ...

Wound Geometry Determines Whether Aligned‐Fiber Scaffolds Accelerate or Impede Diabetic Wound Healing: A Biased Random Walk Analysis

open access: yesAdvanced Healthcare Materials, EarlyView.
Wound closure is governed by geometry‐orientation coupling: aligned fibers speed migration along their axis but hinder perpendicular advance. In vivo diabetic wound experiments with composition‐matched fibrin, combined with an anisotropic diffusion (biased random‐walk) model, quantify this trade‐off and generate a healing landscape.
