Synthesis of Galactooligosaccharides in Milk and Whey: A Review

Comprehensive Reviews in Food Science and Food Safety, 2018
Abstract Galactooligosaccharides (GOS) are synthesized by the enzyme β‐galactosidase during the hydrolysis of lactose. In this so‐called transgalactosylation reaction the galactosyl moiety is transferred to another sugar molecule instead of water resulting in oligosaccharides of different chain lengths and ...

Galactooligosaccharides: Synthesis, metabolism, bioactivities and food applications

Critical Reviews in Food Science and Nutrition, 2023
Prebiotics are non-digestible ingredients that exert significant health-promoting effects on hosts. Galactooligosaccharides (GOS) have remarkable prebiotic effects and structural similarity to human milk oligosaccharides. They generally comprise two to eight sugar units, including galactose and glucose, which are synthesized from substrate lactose by ...

Galactooligosaccharides: Physiological benefits, production strategies, and industrial application

Journal of Biotechnology, 2022
The concern for better life quality has been encouraging the bioprocess industries to develop technological strategies to obtain new biomolecules. Galactooligosaccharides (GOS) are an important class of food-grade oligosaccharides, being classified as non-digestible, and which present prebiotic potential, promoting better conditions of health and well ...

Manufacture of Requeijão cremoso processed cheese with galactooligosaccharide

Carbohydrate Polymers, 2017
The addition of galactooligosaccharide, (GOS, 0, 1.5, 3 or 4g/100g) on the quality parameters of requeijão cremoso was investigated. Chemical characteristics (pH, moisture, fat and protein), color (L*, a*, b*), water mobility by TD- nuclear magnetic resonance, rheology (flow curve and oscillatory tests), microstructure and sensory acceptance (consumer ...

Galactooligosaccharide production by transfer reaction of an exogalactanase

Enzyme and Microbial Technology, 1996
Abstract An exo-β-1,4-galactanase was previously purified from Aspergillus niger . It catalyzed the hydrolysis of potato galactan and several galactooligosaccharides to produce galactose. In the present work, HPLC analysis of the reaction products showed intermediate oligomers with higher degrees of polymerization (dp) than initial oligomers.

Prebiotic Galactooligosaccharide Metabolism by Probiotic Lactobacilli and Bifidobacteria

Journal of Agricultural and Food Chemistry, 2017
Galactooligosaccharides (GOS) are bifidogenic and lactogenic prebiotics; however, GOS utilization is strain-dependent. In this study, commercially available bifidobacteria and lactobacilli probiotic strains were evaluated for growth in the presence of GOS. Several bifidobacteria and lactobacilli grew on GOS; however, the specific GOS oligomers utilized

Development of prebiotic galactooligosaccharide enriched buttermilkand evaluation of its storage stability: Prebiotic Galactooligosaccharide Enriched Buttermilk

Progress in Nutrition, 2019
Prebiotic Galacto-oligosacchrides (GOS) is reportedly present in human milk and elicits bacterial growth i.e. beneficial bacteria in human intestines. The aim of the present study was to produce GOS through trans-galactosylation and development of GOS based buttermilk.

4′-Galactooligosaccharide Affects Sodium and Potassium Metabolism in Rats

The Journal of Nutrition, 1991
The effect of different levels (0, 10 and 20%) of O-beta-D-galactopyranosyl-(1-4)-O-beta-D-galactopyranosyl-(1-4)-D- glucose (4'-GL) on the bioavailability of sodium and potassium was studied in 18 male rats. Three 3-d metabolic balance studies were conducted during the 62-d feeding trial.

Enzymatic formation of galactooligosaccharides in goat milk

Food Bioscience, 2018
Abstract Goat milk has become more popular due to its attractive nutritional profile. Galactooligosaccharides (GOS) are prebiotics with health benefits. The enzymatic formation of GOS in reconstituted goat milk using two commercial β-galactosidases (L6500 from Kluyveromyces lactis and L10 from Aspergillus oryzae) was studied.
