Dessert Gel Strength Testing. II. Collaborative Study

Abstract Collaborative results on a modified Bloom gelometer method for determining dessert gel strength of gelatin desserts show that the modified method is more precise than 21.012. The modified method uses a lower shot-flow rate (45 g/5 sec compared to 200 g/5 sec), and a different method of sample preparation than the current method.
