Harvest Time Influences Inulin and Phenolic Accumulation of Globe Artichoke (Cynara cardunculus L.)
Globe artichoke heart fructans were positively correlated with solar radiation exposure while phenolics were negatively correlated. Browning was positively correlated with phenolics, especially dicaffeoylquinic acid isomer. Artichoke hearts with high phenolic contents had higher CIE b* values (yellowness).

Genome reconstruction in Cynara cardunculus taxa gains access to chromosome-scale DNA variation
The genome sequence of globe artichoke (Cynara cardunculus L. var. scolymus, 2n = 2x = 34) is now available for use. A survey of C. cardunculus genetic resources is essential for understanding the evolution of the species, carrying out genetic studies ...

Artichoke bract polyphenols, particularly from inner bracts, are rich in 1,4‐dicaffeoylquinic acid and chlorogenic acid. In oleic acid‐induced HepG2 cells, these polyphenols activate AMPK and modulate PPARγ signaling, reducing lipid accumulation. These findings highlight the potential of artichoke bracts, including agricultural waste outer bracts, as ...

Mannitol is a sweetener with a low glycaemic index and calorific value that can be produced efficiently by bacterial transformation. We demonstrate its production by Leuconostoc mesenteroides and Fructobacillus fructophilus from a novel substrate, fructo‐oligosaccharides from the tuber yacon in a single‐step process that is amenable to scale‐up ...

Variation of polyphenols in a germplasm collection of globe artichoke
Globe artichoke, a crop native to the Mediterranean Basin, is rich in polyphenols whose health-promoting properties have been well documented in literature. Here, we reported the variation of polyphenol content and antioxidant activity in plant parts (floral stem, receptacle, inner and outer bracts) of 17 cultivars. Our objectives were also to evaluate

ABSTRACT Contemporary scholarship on culinary globalization has theorized homogenization and glocalization through urban consumption, leaving underexamined the transnational agro‐ecological networks that make culinary resistance materially possible.

Globe artichoke (Cynara scolymus) processing generates large amounts of agro-industrial waste, including stems, leaves, and bracts. These by-products represent a valuable and underexplored source of bioactive compounds, particularly phenolic acids ...
