TI 59 Calculator Program for Haugh Unit Calculation
Abstract A TI 59 calculator program was written for Haugh unit determination of the albumen quality of eggs. The original equation developed by Haugh (1937) was incorporated into the program. Use of the calculator program gives an accurate and direct reading of the Haugh unit.

Abstract Eggs were obtained from eight commercial egg production houses over 12 months. The effects of age of bird and season of the year on Haugh units and egg composition were analyzed. Haugh units decreased significantly and egg weight increased significantly as age of bird increased.

Current egg washing practices use wash water temperatures averaging 49 degrees C and have been found to increase internal egg temperature by 6.7 to 7.8 degrees C. These high temperatures create a more optimal environment for bacterial growth, including Salmonella Enteritidis if it is present.
