ผลของการใช้เอนไซม์ต่อสารออกฤทธิ์ทางชีวภาพจากเปลือกและเนื้อแก้วมังกรพันธุ์เนื้อสีแดง Hylocereus polyrhizus (Weber) Britton & Rose

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของการใช้เอนไซม์ต่อสารออกฤทธิ์ทางชีวภาพจากเปลือกและเนื้อแก้วมังกรพันธุ์เนื้อสีแดง พบว่าแก้วมังกรแดงที่ใช้เป็นวัตถุดิบมีอายุการเก็บเกี่ยว 45 – 50 วันนับตั้งแต่ออกดอกเป็นระยะที่มีการสะสมสารออกฤทธิ์ทางชีวภาพและเบต้าไซนานินสูงกว่าระดับอื่นอย่างมีนัยสำคัญ (p<0.05) และเมื่อใช้อุณหภูมิ 85◦C นาน 3 นาทีร่วมกับกรดแอสคอร์บ ...
