Kefir çok eski bir fermente süt mamülü olup, hammaddesi keçi, koyun ve inek sütüdür. %0.6-0.8 alkol içermesi nedeniyle fermente süt içkisi olarak tanınır. Günümüzde kefirin birçok hastalıklar üzerindeki iyileştirici etkisinden dolayı önemi artmıştır. Kefir üretiminde fermantasyonu sağlamak üzere kefir tanelerinden yararlanılır.
