Supplementary material; Yeast Biodiversity in Kefir Grains and Liquid Kefir Using NGS

Kefir represents a unique microbial ecosystem where bacteria and yeasts coexist in a complex symbiotic structure. Although bacterial communities in kefir have been extensively characterized, the fine-scale ecological differentiation of yeast populations between kefir grains and the corresponding fermented liquid has remained underexplored.
