Formation of Three Selected AGEs and their Corresponding Intermediates in Aldose- and Ketose-lysine Systems [PDF]

open access: goldeFood, 2020
Advanced Glycation End Products (AGEs) could be formed with α-dicarbonyl compounds as intermediates; however, simultaneous determination of AGES as well as their precursors and intermediates have rarely been mentioned, so as to investigate the reaction ...

Purification and erythrocyte-membrane perturbing activity of a ketose-specific lectin from Moringa oleifera seeds

open access: goldBiotechnology Reports, 2021
This study purified a hemagglutinating protein (MoL) from Moringa oleifera seed, and investigated its hemolytic activity. Molecular weight and stability of MoL were also determined.

Ketose Reductase Activity in Developing Maize Endosperm [PDF]

open access: greenPlant Physiology, 1987
Ketose reductase (NAD-dependent polyol dehydrogenase EC 1.1.1.14) activity, which catalyzes the NADH-dependent reduction of fructose to sorbitol (d-glucitol), was detected in developing maize (Zea mays L.) endosperm, purified 104-fold from this tissue, and partially characterized.

Facile Enzymatic Synthesis of Ketoses [PDF]

open access: greenAngewandte Chemie, 2015
AbstractStudies of rare ketoses have been hampered by a lack of efficient preparation methods. A convenient, efficient, and cost‐effective platform for the facile synthesis of ketoses is described. This method enables the preparation of difficult‐to‐access ketopentoses and ketohexoses from common and inexpensive starting materials with high yield and ...

Development of an in vitro multi-enzyme system for efficient one-pot biosynthesis of sorbitol from fructose-6-phosphate [PDF]

open access: yesBioresources and Bioprocessing
Fructose-6-phosphate is a key ketose monophosphate intermediate that plays a central role in the metabolic pathway of glycolysis. Sorbitol is a naturally occurring sugar alcohol with diverse biological properties, which is widely applied in the food ...

Crystal structure of a novel homodimeric l‐ribulose 3‐epimerase from Methylomonus sp.

open access: yesFEBS Open Bio, 2021
d‐Allulose has potential as a low‐calorie sweetener which can suppress fat accumulation. Several enzymes capable of d‐allulose production have been isolated, including d‐tagatose 3‐epimerases.
