Abstract The influence of various strains of Lactobacillus buchneri and Lactobacillus parabuchneri on cheese ripening was studied. The strains that originated from silage cultures and cheese were able to form 1,2-propanediol and ornithine, and differed in the production of histamine and γ-aminobutyric acid.

Carbamate kinase of Lactobacillus buchneri NCDO110. I. Purification and properties.

Carbamate kinase has been prepared from Lactobacillus buchneri NCDO110. An approximately 91-fold increase in the specific activity of the enzyme was achieved. The purified extract exhibited a single band following polyacrylamide gel electrophoresis. The apparent molecular weight as determined by gel electrophoresis was about 97,000.
