Expression of DinJ-YafQ System of Lactobacillus casei Group Strains in Response to Food Processing Stresses. [PDF]

open access: yesMicroorganisms, 2019
Toxin-antitoxin (TA) systems are widely distributed in bacterial genomes and are involved in the adaptive response of microorganisms to stress conditions. Few studies have addressed TA systems in Lactobacillus and their role in the adaptation to food environments and processes. In this work, for six strains belonging to L.

Isolation of Group Specific Products from Lactobacillus casei and L. casei var. rhamnosus [PDF]

open access: yesJournal of General Microbiology, 1963
SUMMARY An examination has been made of serologically reactive products obtained from four strains of Lactobacillus casei (serological groups B and C) and two strains of Lactobacillus casei var. rhamnosus (serological group C). Cell wall preparations were hydrolysed with a preparation of Streptomyces muralytic enzyme and the soluble indiffusible ...

Comprehensive Peptide Profiling Reveals the Influence of Streptococcus Thermophilus, Lactobacillus Delbrueckii Subsp. bulgaricus, and Endogenous Milk Proteases on the Hydrolysis of Milk Proteins During Early‐Stage Lactic Acid Fermentation

open access: yesChemFoodChem, EarlyView.
Untargeted peptide profiling investigates how S. thermophilus, Lb. bulgaricus, and endogenous milk enzymes impact proteolysis during early‐stage milk fermentation. ≥ 3000 identified peptides show the strongest influence of LB on the peptide profile and number of bioactive peptides. Shorter peptides are mostly formed by LB and hydrolyzed by ST.
