Inhibition and Mechanism of Protein Nonenzymatic Glycation by Lactobacillus fermentum. [PDF]

open access: yesFoods
Lactobacillus fermentum (L. fermentum) was first evaluated as a potential advanced glycation end-product (AGE) formation inhibitor by establishing a bovine serum albumin (BSA) + glucose (glu) glycation model in the present study. The results showed that the highest inhibition rates of pentosidine and total fluorescent AGEs by L.

Characteristics of the adhesive determinants of Lactobacillus fermentum 104 [PDF]

open access: bronzeApplied and Environmental Microbiology, 1991
The adhesion of Lactobacillus fermentum 104-R and the variant strain 104-S to porcine gastric squamous epithelium was investigated. An epithelium-specific adhesion was detected for strain 104-S; however, strain 104-R expressed enhanced adhesion capacity to the control surfaces of polystyrene and bovine serum albumin.

Genomic characterization of Lactobacillus fermentum DSM 20052 [PDF]

open access: yesBMC Genomics, 2020
Abstract Background Lactobacillus fermentum, a member of the lactic acid bacteria complex, has recently garnered increased attention due to documented antagonistic properties and interest in assessing the probiotic potential of select strains that may provide human health benefits. Here, we genomically characterize L.

Identification and Characterization of a Novel d-Branched-Chain Amino Acids Importer from Lactobacillus fermentum. [PDF]

open access: yesChembiochem
Certain lactic acid bacteria produce d‐branched‐chain amino acids (d‐BCAA) and encode isoleucine 2‐epimerase (ILEP) and an uncharacterized transporter (AAP). We demonstrate that the transporter is a novel, non‐stereospecific BCAA importer. The ILEP‐AAP operon likely aids in storing and utilizing BCAA in a form less accessible to other organisms ...

Protoplast fusion of Lactobacillus fermentum [PDF]

open access: yesApplied and Environmental Microbiology, 1986
Tetracycline-resistant (Tetr) erythromycin-resistant (Eryr) fusants of Lactobacillus fermentum 604 carrying a 10-megadalton Tetr plasmid and L. fermentum 605 carrying a 38-megadalton Eryr plasmid were obtained by means of polyethylene glycol-induced protoplast fusion.

Comparative study of nine Lactobacillus fermentum bacteriophages [PDF]

open access: yesJournal of Applied Microbiology, 2001
To investigate the basic properties of six temperate and three virulent phages, active on Lactobacillus fermentum, on the basis of morphology, host ranges, protein composition and genome characterization. All phages belonged to the Siphoviridae family; two of them showed prolate heads. The host ranges of seven phages contained a common group of strains.

Structure determination of the exopolysaccharide of Lactobacillus fermentum TDS030603—A revision [PDF]

open access: yesCarbohydrate Research, 2013
The highly viscous neutral exopolysaccharide, produced in large amounts by Lactobacillus fermentum TDS030603 in MRS broth and in a chemically defined medium supplemented with glucose, was investigated by GLC(-EIMS) monosaccharide and methylation analysis, periodate oxidation, MALDI-TOF mass spectrometry, and 1D/2D NMR spectroscopy.

An investigation of the probiotic properties of Lactobacillus fermentum

open access: yesInternational Journal of Life Sciences and Biotechnology, 2020
The study assessed some of the probiotic characteristics of an isolate (AB4 26) of Lactobacillus fermentum. AB4 26 was isolated from a faecal sample of an infant, fed with breast milk. The results indicated that the isolate had acceptable survival rates in gastric juice both in the presence and absence of pepsin.

Lysis of modified walls from Lactobacillus fermentum [PDF]

open access: yesJournal of Bacteriology, 1975
The N and O substitution in wall peptidoglycan from Lactobacillus fermentum was studied in relation to growth phase, as well as the lytic activities and the effect of trypsin on them. The N-nonsubstituted sites were determined by dinitrophenylation techniques.
