Sensory Quality of Macadamia Nut Butter: Effects of Kernel Grade and Maturity. [PDF]

This study investigated how macadamia nut quality (maturity and oil content) and style (size) influence the sensory profile of macadamia nut butter. Descriptive sensory analysis showed that kernel quality, rather than style, most strongly affected butter characteristics, with mature, high‐oil nuts producing more consistent quality.
