[Mannanases of microorganisms].

The current data on microbial mannanases are summarised in the work. The questions concerning the spreading of mannanases substrates--mannans in nature, their structural variations are regarded. The production of mannanases by micro-organisms of different taxonomic groups, their physico-chemical properties and substrate specificity are described.

Isolation of β-mannanase-producing microorganism

Abstract A bacterium which produced β-mannanase was isolated from soil using copra meal as a crude mannan preparation. The partially purified enzyme solubilized copra mannan and produced mannobiose, mannotriose, and mannotetraose as major products. The enzyme appeared to hydrolyze the unsubstituted β-mannan domain preferentially.

Mannanase production by the lettuce endosperm

Endo-β-mannanase (EC 3.2.1.78) is produced and secreted by the cells of the endosperm of lettuce (lactuca sativa L.) "seeds" (achenes). In imbibed intact seeds, production is prevented by inhibitors. If the endosperm is incubated alone, these inhibitors can be removed by leaching, allowing mannanase production.

Abstract Extracts of ripe tomato fruit hydrolysed locust bean galactomannan, a linear β-1,4-mannan with branches of single galactose residues. The viscosity of the reaction mixture decreased sharply relative to the release of reducing groups, indicating random hydrolysis of the mannan backbone of the polysaccharide.
