Nippon Eiyo Shokuryo Gakkaishi, 1997 1) ブラックマッペグロブリンは, 沈降係数8Sのタンパク質からなり, 11Sタンパク質は, アルカリ性でゲル濾過を行ったときのみ認められたことから, 本来存在するタンパク質ではなく, 8S成分が解離会合して生成したものと推察される。2) 8Sグロブリンは糖タンパク質であり, 2.5%のマンノースと, 0.047%のグルコサミンを含んでいた。3) 8SグロブリンはSDSにより分子量55,000, 45,000, 33,000の3種類のサブユニットに解離したが, これらの結合にS-S結合は関与していないことが推察された。
