Comprehensive Peptide Profiling Reveals the Influence of Streptococcus Thermophilus, Lactobacillus Delbrueckii Subsp. bulgaricus, and Endogenous Milk Proteases on the Hydrolysis of Milk Proteins During Early‐Stage Lactic Acid Fermentation

Untargeted peptide profiling investigates how S. thermophilus, Lb. bulgaricus, and endogenous milk enzymes impact proteolysis during early‐stage milk fermentation. ≥ 3000 identified peptides show the strongest influence of LB on the peptide profile and number of bioactive peptides. Shorter peptides are mostly formed by LB and hydrolyzed by ST.

Adolescent social isolation disrupts hippocampal function and exacerbates emotional symptoms, with sex‐specific patterns, as shown by human studies. Macrophage extracellular vesicles deliver Mef2d proteins to aggravate Bacteroides fragilis pathogenicity in type 2 diabetes arterial calcification

Bacteroides fragilis is associated with type 2 diabetes (T2D) arterial calcification and can be activated by macrophage‐derived extracellular vesicles (EVs). BF takes up EVs via receptor‐mediated endocytosis, and activation is induced by EV‐derived Mef2d, thereby inhibiting ArsR family transcriptional regulator transcription.
