Monosodium L-Glutamate Pentahydrate

The title compound, Na + .C 5 H 8 NO 4 - .5H 2 O, crystallizes with two independent chemical units, composed of two L-glutamate anions (Glu A and Glu B), two Na + ions and ten water molecules, per asymmetric unit. Each Na + ion is coordinated by six water molecules in an octahedral arrangement.

Monosodium glutamate metabolism in the neonatal monkey

Monosodium glutamate (MSG) administered by gastric tube to 10 infant monkeys at doses of 1-4 g/kg produced rapid increases in plasma glutamate (17- to 33-fold) and aspartate (50- to 90-fold) levels. The degree of elevation was proportional to the dose administered. Levels of other amino acids were unaffected.

Abstract Intraperitoneal or intragastric injection of monosodium l -glutamate (4 mg/g) to infant rats invariably caused an increase in brain glutamine, never in brain glutamate. The toxicity (convulsions) observed after these doses was not unique to l -glutamate; monosodium l -aspartate or d -glutamate gave similar symptoms.

Abstract l -Monosodium glutamate ( l -MSG), dl -monosodium glutamate ( dl -MSG) and l -glutamic acid ( l -GA), each at dietary concentrations of 0.1 and 0.4%, were administered from 12 weeks of age to Sprague-Dawley rats for periods of up to 2 years and combined with a multigeneration reproduction test.

(a) A kinetic study of plasma glutamic acid (GA) was made after monosodium glutamate (MSG) administration to human volunteers. MSG was given at doses of 30,60 and 120 mg/kg in a bouillon and of 60 mg/kg in tomato juice. In another experiment a normal meal was consumed without added MSG.
