The Effect of Aqueous Extract of Rosa canina on Antioxidant Activity, Sensory Evaluation, and Physicochemical Properties of Yogurt

Addition of aqueous extract of Rosa canina to yogurt enhanced phenolic content and antioxidant activity, improved sensory properties, and increased acidity; however, higher extract concentrations also led to greater syneresis, indicating a balance between functional benefits and product stability.
