Bioactive Phytochemical Compounds in Medicago sativa L. (Alfalfa): A Systematic Review of Biological Properties and Therapeutic Relevance in Nutraceutical and Functional Food Implications

open access: yesFood Frontiers, EarlyView.
ABSTRACT Medicago sativa L. (alfalfa) harbors a remarkably diverse reservoir of bioactive secondary metabolites. Flavonoids, isoflavones, and triterpenoid saponins dominate its bioactivity landscape, driving potent antioxidant, anti‐inflammatory, antimicrobial, estrogenic, hypolipidemic, and cytotoxic actions through redox modulation, membrane ...

Nitrate reduction by salivary bacteria, glucose metabolism, and lifestyle

open access: yesJournal of Oral Microbiology
Background Nitrate reductases (NR) expressed in oral bacteria reduce nitrate to nitrite. Depending on the environmental conditions and types of bacteria present nitrite can be further reduced to ammonium via Dissimilatory Nitrate Reduction to Ammonium ...

Assessment of Metabolites in Noni Fruit Slurry Fermented With Four Non‐Saccharomyces Yeasts

open access: yesFood Frontiers, EarlyView.
Dried noni fruit slurry (DNFS) was fermented for 14 days with selected non‐Saccharomyces yeasts. GCMS, HPLC and amino acid analysis showed that Pichia kluyveri Frootzen and Williopsis saturnus NCYC22 grew well, reduced off‐flavor fatty acids, generated fruity aroma compounds and preserved total phenolic content. ABSTRACT Noni products often suffer from

Molecular Mechanism of Mulberrin Regulating Lipid Metabolism Homeostasis Based on the Gut–Liver Axis Fiaf/AMPK Signaling Pathway

open access: yesFood Frontiers, EarlyView.
The molecular mechanism for mulberrin regulating lipid metabolism homeostasis. ABSTRACT Lipid metabolism disorders and the induced metabolic diseases have risen to become one of the primary public health issues. Our preliminary experimental results confirmed that mulberry leaf flavonoid extract exhibited efficacy in lipid metabolism regulation; the ...

Intestinal luminal polyamines support the gut colonization of enteric bacterial pathogens by modulating flagellar motility and nitrate respiration

open access: yesmBio
Salmonella enterica serovar Typhimurium (STm) is an etiological agent of common foodborne diseases and a major health concern worldwide. STm gastrointestinal infection induces intestinal inflammation, allowing STm outgrowth in the gut lumen by exploiting
