To reduce limonoid bitterness in citrus fruit, the biosynthesis and metabolism of nomilin in stems of Yuzu (Citrus junos Sieb. ex Tanaka) and Sudachi (Citrus sudachi Hort. ex Shirai) were studied by using 14C-acetate.Biosynthesis of nomilin from acetate was more active in the stems of seedlings than in shoots of citrus tree.
