DESENVOLVIMENTO DE TERMINOLOGIA DESCRITIVA PARA WARMED-OVER FLAVOR EM CARNE ASSADA BOVINA

open access: yesCiência Animal Brasileira, 2014
We evaluated the warmed-over flavor development (WOF) in bovine roast-beef through adescriptive sensory analysis using the Longissimus dorsi, Semitendinosus and Supraspinatus muscles of Nellore steers.

Off-flavor of Mustard Paste Part I

open access: yesJournal of the agricultural chemical society of Japan, 1965

Control of off-flavor compounds in a full-scale recirculating aquaculture system rearing rainbow trout Oncorhynchus mykiss

open access: yesJournal of Applied Aquaculture, 2020
Fish is increasingly produced in recirculating aquaculture systems (RAS), which can offer some production and environmental benefits. Unfortunately, there is a tendency to develop off-flavors in RAS, mainly caused by geosmin (GSM) and 2-methyl isoborneol

Time after time – circadian clocks through the lens of oscillator theory

open access: yesFEBS Letters, EarlyView.
Oscillator theory bridges physics and circadian biology. Damped oscillators require external drivers, while limit cycles emerge from delayed feedback and nonlinearities. Coupling enables tissue‐level coherence, and entrainment aligns internal clocks with environmental cues.

Identification of key sensory and chemical factors determining flavor quality of Xinyu mandarin during ripening and storage

open access: yesFood Chemistry: X
Xinyu mandarin is popular for its good flavor, but its flavor deteriorates during postharvest storage. To better understand the underlying basis of this change, the dynamics of the sensory profiles were investigated throughout fruit ripening and storage.
