Food Science &Nutrition, Volume 7, Issue 12, Page 3853-3862, December 2019., 2019 Mediterranean diet is rich in antioxidant compounds as vitamin C, vitamin E, carotenoids, phenolic compounds, and trace elements as selenium or zinc. The total antioxidant capacity of the diet was estimated as 9.506,33 ET/100 g/person/day, and the total phenolic consume was estimated as 1.839,05 mg GAE/person/day.

Partially-gelatinised starches by high hydrostatic pressure as oligoelement carriers
Spanish Journal of Agricultural Research, 2008 Zinc deficiency is a world wide problem, centred on the lower income population, though not restricted to it. Food supplementation with magnesium is also considered of interest for correcting deficiencies in this oligoelement. Highpressure partially gelatinised starch is proposed as a vehicle for inclusion of these metals in food products.
