Untargeted peptide profiling investigates how S. thermophilus, Lb. bulgaricus, and endogenous milk enzymes impact proteolysis during early‐stage milk fermentation. ≥ 3000 identified peptides show the strongest influence of LB on the peptide profile and number of bioactive peptides. Shorter peptides are mostly formed by LB and hydrolyzed by ST.

Circulating Serum AGRN and ADAMTS8 With Related Candidates as Potential Biomarkers for Carotid Plaque Presence and Vulnerability

This study investigated serum AGRN and ADAMTS8 as biomarkers for carotid plaques within human participants. Results showed a significant correlation with plaque presence, yielding a moderate combined diagnostic performance. However, these markers poorly differentiated plaque vulnerability.
