Abstract BACKGROUND Phenolic extracts are recognized for their health‐promoting properties, although some physicochemical characteristics limit their food applications. The present study aimed to valorize orange juice by‐products through enzymatic and hydroalcoholic extraction to obtain flavonoid ingredients and to evaluate their application in pectin ...

Heat resistance of Paecilomyces variotii in sauce and juice
It has been demonstrated that some anamorphic fungi ( Paecilomyces variotii, Fusarium sp) could cause spoilage of food products after pasteurisation. Four food-borne and one clinical isolate of P. variotii were cultivated on one solid medium and three liquid media.

Real‐time quality and safety monitoring of fruit juice using paper‐based platform
Schematic illustration of a paper‐based biosensor for rapid detection of fruit juice spoilage. Abstract Food spoilage and safety concerns still remain critically challenging within the fruit juice industry, especially as conventional detection methods, though precise, are often too time‐consuming, costly, and reliant on centralized laboratories.

The study framework for exploring microbial community assembly and community stability of biosynthesis gene cluster (BGC)‐containing species under thermal stress (20°C–65°C) during 39 days of spontaneous fermentation. Temperature gradients during spontaneous fermentation reshape microbial community assembly, driving pronounced succession in both ...

Microbial Deterioration Potential and Mitigation Strategies in Blended Cement Structures: A Review
Microbial‐induced deterioration (MID) is a threat to the durability of cement‐based materials (CBMs) particularly in sewer and wastewater systems. Whereas blended cements incorporating supplementary cementitious materials (SCMs) offer environmental benefits such as reduced carbon (IV) oxide (CO2) emissions and enhanced mechanical performance, their ...

Paecilomyces pyelonephritis in a patient with urolithiasis
Fungal organisms are increasingly implicated in nosocomial urinary tract infections. Although Candida, Mucor and Aspergillus are the most commonly identified species, rare fungi are also occasionally observed to infect humans.
