Abstract The European Commission asked EFSA to update its 2014 risk assessment on perchlorate in food. Perchlorate is a contaminant of both natural and anthropogenic sources present in food and drinking water. Previously associated with food spoilage, it has in the past been responsible for causing infection in humans, usually as an opportunistic pathogen.
