Proteolytic Enzymes of Psychrophilic Bacteria
1) 冷凍食品中の低温細菌にはPseudomonas属が多い。2) 低温細菌を0℃付近で培養する際, そのたん白分解酵素の活性は, ペプトン含有培養液中では比較的すみやかに失われるのに対して, 合成培養液中では長期間安定に存在している。3) 菌体内酵素と菌体外酵素の性状を比較すると, 耐熱性, 至適pH, 反応温度による影響では同一の傾向を示すが, 金属イオンによる阻害作用に対してはわずかにくいちがうところがあった。4) 菌体の細胞膜にもなお, たん白分解酵素が結合して存在するらしい。5) 溶菌以後, 酵素作用が急に上昇するのは菌体内, 細胞膜, 菌体外に存在する酵素が相加作用を起こすものと考えられる。
