Psychrotrophic Bacteria

open access: yes, 2017
Psychrotrophic bacteria are responsible for the highest spoilage of unprocessed or heated milk during storage because of their capacity to synthesize thermostable extracellular proteases and lipases leading to gelation, off-odours/flavours, loss of sensory quality and shelf life. This chapter critically describes and discusses various topics related to

Psychrotrophic bacteria in sausage

Food / Nahrung, 1993
AbstractA total of 50 samples of frozen fresh beef sausage were collected from grocery stores at Beni Suef City. These samples were examined for enumeration, isolation and identification of psychrotrophic bacteria. All samples contained psychrotrophic bacteria in variable numbers.

Psychrotrophic Clostridia

Journal of Applied Bacteriology, 1965
Of 287 strains of clostridia of 23 different species 96 grew well at 6°, 77 of which were Clostridium carnofoetidum var. amylolyticum and 16 were Cl. perfringens. The water of

Psychrophilic and psychrotrophic microorganisms

Experientia, 1986
Psychrophilic and psychrotrophic microorganisms have the ability to grow at 0 degree C. Psychrotrophic microorganisms have a maximum temperature for growth above 20 degrees C and are widespread in natural environments and in foods. Psychrophilic microorganisms have a maximum temperature for growth at 20 degrees C or below and are restricted to ...

Genetic Transformation System for a Psychrotrophic Deep-sea Bacterium: Isolation and Characterization of a Psychrotrophic Plasmid

Marine Biotechnology, 2001
A versatile system that permits genetic manipulation of a psychrotrophic deep-sea bacterium, Pseudoalteromonas sp. PS1M3, has been developed. A cryptic indigenous plasmid, pPS1M3, of 3.1 kb from the above strain was isolated and characterized. The nucleotide sequence analysis of plasmid pPS1M3 revealed the presence of one open reading frame, and its ...

Psychrotrophic properties of Listeria monocytogenes

Canadian Journal of Microbiology, 1972
Listeria monocytogenes grew between 3 and 45C. Growth at 10C was at a rate characteristic of psychrophilic bacteria. The increase in the duration of the lag phase of growth with decreasing temperatures was expressed with a hyperbolic curve which indicated an infinite lag time at 3.3C.

Psychrotrophs in dairy products: Their effects and their control

Critical Reviews in Food Science and Nutrition, 1994
Health concerns and technological effects of psychrotrophic bacteria in dairy products are reviewed, as well as methods to control their presence and development. The various Gram-negative and Gram-positive psychrotrophic species are listed and, with respect to pathogenic psychrotrophs, emphasis is given on Listeria monocytogenes, Yersinia ...
