Recent Progress in the Microbial Production of Pyruvic Acid
Pyruvic acid (pyruvate) is a cellular metabolite found at the biochemical junction of glycolysis and the tricarboxylic acid cycle. Pyruvate is used in food, cosmetics, pharmaceutical and agricultural applications.

Dehydroalanine and Lysinoalanine in Thermolyzed Casein do not Promote Colon Cancer in the Rat [PDF]
Thermolysis of proteins produces xenobiotic amino-acids such as the potentially toxic lysinoalanine, and the alkylating agent, dehydro¬alanine, which have been considered possible health hazards.

ABSTRACT Cancer is a result of uncontrolled cell growth with the potential to damage or spread to another part of the body. It is the deadliest disease in the world; therefore, rapid and sensitive detection is essential to fight it. In the past few decades, many diagnosis tools have been developed to detect cancer and monitor therapy progress.

The Role of Proteins in the Sensory Perception/Organoleptic Properties of Food
Protein structure controls sensory attributes such as flavor, texture, and aroma. This can occur during amino acid breakdown, Maillard reactions and lipid–protein interactions which generate flavor profiles. Bioactive peptides also provide taste and health benefits.

High-field dissolution dynamic nuclear polarization of [1-(13)C]pyruvic acid.
[1-(13)C]pyruvate is the most widely used hyperpolarized metabolic magnetic resonance imaging agent. Using a custom-built 7.0 T polarizer operating at 1.0 K and trityl radical-doped [1-(13)C]pyruvic acid, unextrapolated solution-state (13)C polarization ...

Understanding the aqueous phase ozonolysis of isoprene: distinct product distribution and mechanism from the gas phase reaction [PDF]
The aqueous phase reaction of volatile organic compounds (VOCs) has not been considered in most analyses of atmospheric chemical processes. However, some experimental evidence has shown that, compared to the corresponding gas phase reaction, the aqueous ...

Abstract BACKGROUND To elucidate the impact of environmental factors on the nutritional quality of metabolites in wheat seedlings, both primary and secondary metabolites must be comprehensively examined. We thus conducted a comparative analysis of these metabolites in wheat seedlings grown under various photosynthetic photon flux densities (PPFD) (200,
