Diffusive dynamics in trehalose aqueous solutions by QENS
Physica B: Condensed Matter, 2000Abstract The work reports preliminary QENS results on aqueous solutions of trehalose. The employment of H/D substitution allows the separation of the diffusive dynamics of water from that of trehalose. The data analysis shows a slowed down water dynamics in comparison to that of bulk water.

QENS investigation of the dynamics of starch saccharides
Physical Chemistry Chemical Physics, 2005We present here quasi-elastic neutron scattering results on D20 hydrated samples of amylose, one of the main saccharide components of starch. Two different sample hydrations (h = 0.5 and 1.0 g D2O (g dry amylose)-1 have been investigated in the temperature range 170 to 350 K.
