Proteomic characterization of peanut flour fermented by Rhizopus oryzae. [PDF]

open access: yesHeliyon
Fermentation alters the protein content and composition of foods. To characterize fungal catabolism of peanut proteins, defatted peanut flour was fermented by Rhizopus oryzae (R. oryzae) for up to 48 h and evaluated by SDS-PAGE, mass spectrometry, and antibody binding.

Metabolic engineering of Rhizopus oryzae for the production of platform chemicals [PDF]

open access: yesApplied Microbiology and Biotechnology, 2012
Rhizopus oryzae is a filamentous fungus belonging to the Zygomycetes. It is among others known for its ability to produce the sustainable platform chemicals L: -(+)-lactic acid, fumaric acid, and ethanol. During glycolysis, all fermentable carbon sources are metabolized to pyruvate and subsequently distributed over the pathways leading to the formation

Multilocus microsatellite typing for Rhizopus oryzae [PDF]

open access: yesJournal of Medical Microbiology, 2010
Rhizopus oryzae is the most frequent causative agent of zygomycosis. Although zygomycosis causes considerable morbidity and mortality in immunocompromised patients, the epidemiology of the disease is not well studied and no standard molecular typing method has been described for any of the causative agents.

Inhibitory Effect of Moriniafungin Produced by Setosphaeria rostrata F3736 on the Development of Rhizopus Rot

open access: yesThe Plant Pathology Journal, 2020
Rhizopus rot is a serious postharvest disease of various crops caused by Rhizopus spp. and controlled mainly by synthetic fungicides. We detected the antifungal activity of a culture extract of Setosphaeria rostrata F3736 against Rhizopus oryzae.

Rhizopus delemar is the proper name for Rhizopus oryzae fumaric-malic acid producers [PDF]

open access: yesMycologia, 2007
The zygomycete Rhizopus oryzae currently is identified by sporangiophore morphology and growth temperature, but heterogeneity of the species has been reported. We examined the suitability of organic acid production as an effective taxonomic character for reclassification of the species.
