Adaptive Capacity and Recovery of Small‐Scale Fishers Following Cyclone Impacts: Evidence From Lake Chilwa, Malawi

open access: yesAquaculture, Fish and Fisheries, Volume 6, Issue 5, October 2026.
ABSTRACT Climate‐induced extreme events increasingly threaten small‐scale fisheries and fishing‐dependent communities, yet evidence on post‐cyclone recovery and adaptive capacity in inland lake systems remains limited. This study examined perceived changes in fish catches, fishing practices, adaptive capacity, recovery patterns and community resilience

Review on Gelling and Foaming Agents in Food: Mechanism and Applications

open access: yesFood Science &Nutrition, Volume 14, Issue 10, October 2026.
A comprehensive Graphical Abstract to visualize how different food additives act as gelling and foaming agents. It emphasizes their shared origin as hydrocolloids or proteins but distinct operational mechanisms that transform food materials. The diagram provides a clear path from molecular structure and interaction principles to the specific macro ...

Single‐Step Production of Mannitol From Yacon Fructo‐Oligosaccharides Using Fructophilic Lactic Acid Bacteria

open access: yesMicrobiologyOpen, Volume 15, Issue 5, October 2026.
Mannitol is a sweetener with a low glycaemic index and calorific value that can be produced efficiently by bacterial transformation. We demonstrate its production by Leuconostoc mesenteroides and Fructobacillus fructophilus from a novel substrate, fructo‐oligosaccharides from the tuber yacon in a single‐step process that is amenable to scale‐up ...

Mechanism of puberulic acid contamination in red yeast rice tablets that caused a serious food poisoning outbreak in Japan

open access: yesProceedings of the Japan Academy, Series B
In Japan, serious food poisoning among individuals who took supplement tablets for lowering plasma cholesterol levels have been publicized since late March 2024. The tablets were prepared from red yeast rice (RYR), a product of Monascus pilosus. Puberulic acid (PA) was detected as an unexpected compound in tablets that caused food poisoning.

Plasma‐Activated Water Primes Black Rice Starch for Amplified Hydrothermal Modification: Structural Insights and Enhanced Digestibility

open access: yesJournal of Food Science, Volume 91, Issue 10, October 2026.
ABSTRACT This study evaluated the ability of plasma‐activated water (PAW) to modulate black rice starch response to autoclaving. Six formulations were prepared: native starch (Native), starch treated with PAW for 30 or 60 min (P30, P60), starch autoclaved only (AC), and starch subjected to PAW for 30 or 60 min prior to autoclaving (P30AC, P60AC).
