Saturation in Milk and Meat Fats
Science, 1967Meat and milk products from ruminants (cows, goats, sheep, and beef animals) contribute 35 to 40 percent of the fat in the average American diet. Such fat is highly saturated, containing less than about 4 percent polyunsaturated fatty acids. The unsaturated plant lipids (fats) ordinarily consumed by the ruminant are hydrogenated (saturated) in the ...

Saturated fat and heart disease
BMJ, 2016A new focus on whole dietary patterns should clear some of the confusion Recent meta-analyses,1 2 3 commentaries,4 5 and bestselling books6 7 have called for an end to the proscription of saturated fats (SFAs), reversing years of dietary advice. Advocates of this shift draw support from prospective cohort studies since 1984, which when pooled find no ...

Dairy fat, saturated animal fat, and cancer risk
Preventive Medicine, 1991The relationship between the per person supply of fat from dairy products and lard and cause-specific cancer mortality was examined using 1979-1981 FAO data from 36 countries. Significant correlations (P less than 0.01) were found between dairy and lard fat intake and total, breast, prostate, rectal, colon, and lung cancer.

Abdominal three-dimensional magnetic resonance angiography was performed in 35 patients in the equilibrium phase without fat saturation, with conventional fat saturation, and with fast partial fat saturation. Qualitative and quantitative evaluation demonstrated significantly better vessel visualization with both fat-saturated techniques.

Saturated fat feeding, hyperlipidemia and hyperinsulinemia
Biochimica et Biophysica Acta (BBA) - Lipids and Lipid Metabolism, 1983The effects of feeding saturated and eucaloric unsaturated fat-rich diets on lipemia and insulinemia in female Brown Norway rats have been compared. The relative hyperlipemia in the unsaturated fat group at 8 a.m. has declined at 10 a.m., whereas the saturated fat group at 8 a.m. gives lower values than at 10 a.m. It suggests that saturated fat feeding

Saturated Fats, Cholesterol, and Dietary Compliance
Archives of Internal Medicine, 1992Lack of response to a cholesterol-lowering diet can be caused by physiological nonresponsiveness, inadequate knowledge, or inability to change dietary habits (poor compliance). The purpose of this study was to evaluate the dietary compliance of hyperlipidemic individuals who received intensive initial dietary education and followup, and who showed an ...

• For decades a reduction of the intake of saturated fat has been the cornerstone in dietary prevention of cardiovascular disease. The main argument for this advice is its alleged influence on blood cholesterol. However, several recent trials have found no such effect in spite of intakes up to five times higher than the recommended upper limit. Even if

Saturated and polyunsaturated fats
1981Dietary fats consist of mixed triglycerides which are formed by the esterification of glycerol with saturated and unsaturated fatty acids (See Chapter 1). Fats are said to be saturated if they contain a sizable proportion of saturated fatty acids, as compared with unsaturated fats which are rich in unsaturated fatty acids.

Expansion of solidifying saturated fats
Journal of the American Oil Chemists' Society, 1974AbstractFrom literature it appears that simple saturated triglycerides and commercial fats contract to a considerable extent when they undergo transformation from liquid to solid state and from an instable to a more stable crystalline form. In spite of these facts, the simple saturated even triglycerides and some fully hydrogenated fats exhibit violent

Is There an Excess of Saturated Fat in Infant Formula?
JAMA: The Journal of the American Medical Association, 1985To the Editor.— Recommendation No. 3 from the consensus conference on Lowering Blood Cholesterol to Prevent Heart Disease 1 states: "All Americans (except children younger than 2 years of age) should be advised to adopt a diet that... reduces saturated fat intake to less than 10% of total calories." We asked the consensus conference panel why they ...
