Complex Nature of the Genome in a Wine Spoilage Yeast, Dekkera bruxellensis

open access: yesEukaryotic Cell, 2009
When the genome organizations of 30 native isolates belonging to a wine spoilage yeast, Dekkera (Brettanomyces) bruxellensis, a distant relative of Saccharomyces cerevisiae, were examined, the numbers of chromosomes varied drastically, from 4 to at least

Degradation kinetics of postharvest quality attributes of rocket leaves grown under different nitrogen rates

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract BACKGROUND Diplotaxis tenuifolia L. cv Dallas (rocket leaves) is one of the most widely consumed fresh‐cut salad vegetables in Europe, especially in southern Italy, being appreciated for its pungent taste and health promoting phytochemicals. However, its short postharvest shelf‐life is still a major drawback.

Molecular identification and phylogenetic analysis of yeast strains isolated from dairy products in Isfahan, Iran

open access: yesIranian Journal of Microbiology
Background and Objectives: Yeasts play a dual role in dairy processing, serving as beneficial fermentative agents that enhance product quality through flavor, texture, and probiotic properties, while also posing spoilage risks if uncontrolled.

Bee pollen as functional food and environmental bioindicator: current evidence and future challenges

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract Bee pollen (BP), a plant‐derived product collected by honey bees, is increasingly promoted as a functional food due to its content of proteins, essential amino acids, lipids, vitamins, minerals, and bioactive compounds such as polyphenols and flavonoids.

Antimicrobial bilayer starch film containing zein electrospun fibers encapsulating thyme essential oil for cherry tomato packaging

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract Background This study evaluated the antimicrobial activity of thyme essential oil (TEO) encapsulated in electrospun zein fibers for use in bilayer films as active packaging for cherry tomatoes. The antimicrobial activity of TEO and bilayer films with 20%, 40%, and 60% TEO was assessed with agar diffusion and microatmosphere assays.

Enhanced 3D Filter‐Exchange Imaging Using Multi‐Slab Acquisition

open access: yesMagnetic Resonance in Medicine, EarlyView.
ABSTRACT Purpose Starting from the implementation of a single‐slice FEXI sequence, a 3D method was developed to accelerate a FEXI experiment and acquire a multi‐slice volume. Methods 3D multi‐slab FEXI divides the volume of interest into different slabs.

Diversity and Dissemination of Brettanomyces bruxellensis During Winemaking and Barrel Aging

open access: yesFermentation
Brettanomyces bruxellensis is recognized as the main spoilage yeast in red wines, producing volatile phenols that negatively impact wine quality. However, few studies have investigated strain diversity within wineries.

Cyberlindnera fabianii, an Uncommon Yeast Responsible for Gluten Bread Spoilage

open access: yesFoods
A single strain of yeast was isolated from industrial gluten bread (GB) purchased from a local supermarket. This strain is responsible for spoilage consisting of white powdery and filamentous colonies due to the fragmentation of hyphae into short lengths

Molecular diagnosis of some species of local cheese contamination with fungi in Tikrit City [PDF]

open access: yesTikrit Journal for Agricultural Sciences
In the current study, 60 samples of different cheeses were examined to determine the extent of fungal contamination. The results showed the presence of mold in 24 samples (40%) and yeast in 16 samples (26.6%). The results of the local white cheese showed
