Stripping of Brussels sprouts

Abstract Stripping was done by machine and by hand. The machine stripped 150 to 400 kg of sprouts per hour. Depending on variety and type of knife, not more than 5 to 20% by weight of the sprouts were cut to the standard required for freezing. When the stripping was done by hand the output was 18·4 kg/h, and 95·9% by weight of the sprouts were cut to
