Subcritical water extraction (SWE), as a method, is non-toxic, non-flammable, cheap, readily available, safe, environmental friendly and uses a green solvent. Chemicals with different functional groups such as flavonoids, vitamins, antioxidants and antimicrobials, can be extracted selectively using SWE.
